Cafe Rio Cilantro Ranch Dressing

1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
1 c. mayonnaise
1 c. buttermilk
2 tomatillos, remove husk, diced
1/2 bunch of fresh cilantro
1 clove garlic
juice of 1 lime
1 jalepeno

Mix all ingredients together in the blender. That's it!

Cafe Rio Black Beans

2 Tbsp. olive oil
2 cloves garlic, minced
1 tsp. ground cumin
1 can black beans, rinsed and drained
1 1/3 c. tomato juice
1 1/2 tsp. salt
2 Tbsp. fresh chopped cilantro

In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro.

(**NOTE** You can add a can of corn, drained, to the beans with a dash of cumin and chili powder, it's not "traditional Cafe Rio")

Cafe Rio Cilantro-Lime Rice

1 c. uncooked rice (long-grain, white rice)
1 tsp. butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 can (15 oz) chicken broth
1 cup water
1 Tbsp. freshly squeezed lime juice
2 tsp. sugar
3 tablespoons fresh chopped cilantro

In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.

Southwest Pasta Salad

makes a huge bowl that will feed at least 12

1 16 oz. box fusilli pasta

1 can corn

1 can black beans

1/2 small red onion diced

1 small bunch cilantro fresh, chopped

1 small red pepper, diced

2 cups Spicy Ranch dressing

Boil pasta about 12 minutes until al dente. Drain and rinse with cool water. Let cool about 15 minutes. Put pasta into large mixing bowl and add dressing. Mix until pasta is coated well. Drain cans of corn and black beans and mix into pasta. Add remaining ingredients and give a good stir. This is best served chilled.

Easy Homeade Vanilly Icecream

Ingredients:
4 cups half-and-half or light cream
1 (14 ounce) can EAGLE BRAND®-Sweetened Condensed Milk
2 tablespoons vanilla extract
Directions: In large bowl, combine ingredients; mix well. Pour into ice cream freezer container. Freeze according to manufacturer's instructions. Freeze leftovers.

* We made this icecream last night, it is a good recipe. Gage added melted Nutella into the icecream and then froze it in the freezer. Yum!

Baked Oatmeal with Almonds and Cherries

Serves: 8

Cooking Time: 45 min

2 cups old-fashioned Quaker oats
¹/2 teaspoon almond flavoring
¹/2 cup almonds, sliced
1 large apple, unpeeled and grated
4 cups milk
¹/4 cup brown sugar
¹/2 cup dried cherries

Preheat oven to 400 degrees F. Coat 3-quart dish or baking pan with cooking spray.
In mixing bowl, combine Quaker oats, almond flavoring, almonds, apple, milk, brown sugar and cherries. Transfer to baking dish. Sprinkle top with additional almonds.
Bake uncovered for 45 minutes. Serve hot.

Variation: Omit all almond flavoring and cherries. Add 1 tablespoon cinnamon, 1/2 cup raisins, and 1/2 cup chopped peanuts.

Easy Crockpot Oatmeal

1 cup Quaker oats
¹/3 cup raisins (optional)
2 ¹/4 cups water
Apples (optional)
Cinnamon (optional)
Nuts (optional)

Spray slow cooker with non-stick spray.
Combine oats, water and other ingredients if desired.
Cook on low for 8 to 10 hours.

Breakfast Oatmeal

¹/2 cup dates or raisins, chopped

Combine Quaker oats, water, salt and dried fruit in a slow cooker.
Cook on low overnight for 8 hours.

Banana Bread Oatmeal

3 cups fat-free milk
3 tablespoons firmly packed brown sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1/4 teaspoon ground nutmeg
2 cups Quaker® Oats (quick or old fashioned, uncooked)
1 cup mashed ripe bananas (about 3 medium)
2 tablespoons coarsely chopped toasted pecans
Plain or vanilla nonfat yogurt (optional)
Banana slices (optional)
Pecan halves (optional)

In medium saucepan, bring milk, sugar, salt and spices to gentle boil (watch carefully); stir in oats. Return to boil; reduce heat to medium. Cook 1 minute for quick oats, 5 minutes for old fashioned oats or until most of liquid is absorbed, stirring occasionally.

Remove oatmeal from heat. Stir in mashed bananas and pecans. Spoon oatmeal into six cereal bowls. Top with yogurt, sliced bananas and pecan halves, if desired.

To toast pecans, spread evenly in shallow baking pan. Bake at 350°F 5 to 7 minutes or until light golden brown. Or, spread nuts evenly on microwave-safe plate. Microwave on HIGH 1 minute; stir. Continue to microwave on HIGH, checking every 30 seconds, until nuts are fragrant and brown.

*I made this today for breakfast and my kids liked it for the most part. Korbin didn't like the pecans in the oatmeal, but Trinity said it tasted better than the last time I made oatmeal. I will definitely use this recipe again.

Crockpot Oatmeal

--1 cup of oats

--2 cups of milk

--2 tablespoons of brown sugar

--1 tablespoon of vanilla

--pinch of salt

--1 chopped apple

The Directions:

--add oats, chopped apple and milk to stoneware

--put in brown sugar, vanilla and pinch of salt

--mix with a spoon

--cover and cook on high for 1-2 hours or low for 2-3.

--check consistency of oats

--garnish with some cinnamon

Nutella Gelato

Makes about 4 cups

You’ll need:
2 cups whole milk
1 cup heavy cream
½ cup sugar, plus ¼ cup
4 egg yolks
½ tsp vanilla extract
½ cup chocolate-hazelnut spread (i.e.: Nutella)
½ cup toasted hazelnuts, crushed, for garnish

Directions:
In a saucepan combine the milk, cream, and ½ cup sugar over medium heat. Cook until the sugar dissolves, about 5 minutes.

Meanwhile, in a medium bowl whip the egg yolks with the remaining sugar using an electric mixer until the eggs have become thick and pale yellow, about 4 minutes. Pour ½ cup of the warm milk and cream mixture into the egg mixture and stir. Add this mixture back into the saucepan. Cook over very low heat, stirring constantly, until the mixture becomes thick enough to coat the back of a wooden spoon, about 7 to 10 minutes.

Place a strainer over a medium bowl and pour the warm custard mixture through the strainer. Stir in the vanilla and hazelnut spread until it dissolves. Chill mixture completely before pouring into an ice cream maker and follow manufacturer’s instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.

*We made this tonight, yummy! We doubled the recipe but couldn't get it to thicken up to the custard stage maybe because we doubled it. We didn't have the hazelnuts to serve with it but it was really good anyways.

Strawberry-Kiwi-Almond Tart

1 package (7 oz) almond paste

1/4 cup butter or margarine, softened

2 tablespoons all-purpose flour

1 egg

1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls

1/4 cup apricot preserves

2 cups sliced fresh strawberries (about 1 lb)

2 kiwifruit, peeled, halved lengthwise and sliced

Heat oven to 375°F. In food processor bowl with metal blade, place almond paste. Cover; process with on-and-off pulses until finely ground. Add butter, flour and egg; process until smooth. Set aside.
On ungreased cookie sheet, unroll dough into 1 large rectangle. Press into 12x9-inch rectangle, firmly pressing perforations to seal. Fold 1/2 inch of dough edges over, forming crust rim.
Spread almond paste mixture over dough to within rim.
Bake 15 to 20 minutes or until crust is golden brown. Immediately spread preserves over tart. Arrange fruit over warm tart. Serve warm or cool.

* I made this tonight for desert with some friends and we quite enjoyed it. I cooked ours in a 9X13 glass baking dish and we served it with fresh whipping cream. It was wonderful.

Strawberry-Mango Salad

Dressing:

1 container (6 oz) Yoplait® Greek Fat Free strawberry yogurt

1/2 cup fresh strawberries

1/4 teaspoon poppy seed

Salad:

6 cups bite-size pieces mixed salad greens

1 1/2cups halved or sliced fresh strawberries

1 cup mango chunks

1/4 cup thinly sliced red onion, separated into rings

1/2 cup pecan halves, toasted

DIRECTIONS

In blender, place dressing ingredients. Cover; blend on high speed about 15 seconds or until smooth.
On 4 salad plates, arrange salad greens, strawberries, mango and red onion. Pour dressing over salads; sprinkle with pecans.

*I made this tonight and we really liked the flavor of the dressing. I didn't put in the red onion or pecans but I did add dried cranberries. We also didn't put in on the plates I left it all in bowls so everyone could add as much or as little of the fruit as they liked.

Candy Bar Chocolate Chip Cookie Sandwiches

2 sticks softened butter

1 Cup granulated sugar

3/4 Cup brown sugar

2 large eggs

1 Tablespoon pure vanilla

3 1/2 Cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon kosher salt

10 oz bag chocolate chips

Variety of snack size Reeses Peanut Butter Cups, Snickers and Kit Kat

1. Preheat oven to 350 degrees F. In a stand or electric mixer, cream butter and sugars until well combined. Add eggs and vanilla until well combined.

2. Place flour, baking soda and salt in large bowl; mix then slowly add to wet ingredients. Add chocolate chips to combine. Using a cookie scoop take one scoop of cookie dough and place on top of snack size candy bar. Take another scoop of dough and place on bottom of candy bar. Seal edges together by pressing and cupping in hand until candy bar is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until cookies are baked to your liking. Let cool for 5 minutes before transferring to cooling rack. Serve with a tall glass of milk, enjoy!

Makes about 24 LARGE Cookies

*I made this and used the cookies suggested, I love the Snickers but don't care as much for the Peanut Butter Cups or the KitKat. I would love to make them again and try Milky Ways and Twix. These cookies are better eaten fresh the day they are baked.

Baked Potato Soup

Recipe from Nestle's Very Best Baking site

2-3 russett potatoes, baked or microwaved
1/4 c. butter
1/4 c. onion, chopped
1/4 c. flour
1 can chicken broth (14.5 oz)
crumbled bacon, shredded cheese, sliced green onions (optional)

In a large saucepan, melt butter and sautee onions until tender. Add flour and stir until smooth. Gradually add in chicken broth and evaporated milk. Scoop potato pulp out of one potato (reserve skin) and mash. Add to the saucepan and cook over medium heat until soup comes to a boil. Dice remaining potatoes and potato skin, add to the soup. Heat through, being careful not to boil. Season with salt and pepper to taste. Serve immediately, topped with bacon, cheese and onions, if desired.

Pineapple Chicken

Add to the crock pot:

5-6 boneless, skinless, frozen chicken breasts (only used about 4)
2 20oz cans of pineapple chunks and juice
1/2 tsp ginger
1/4 cup brown sugar
1 tsp minced garlic
1/3 cup soy sauce
1/2 tsp red pepper flakes if you like some kick (YES!)

Cook on HIGH for 4 hours or LOW for 5-6 hours. 1 hour before it's done cooking, remove the chicken to dice into pieces and then return the pieces to the sauce.

Combine in shaker bottle:

1/4 cup water
5 Tbsp cornstarch

Add to the sauce in the crock pot to thicken the sauce during the last hour of cooking, be sure to stir it in.

Serve over rice, sprinkle with toasted sesame seeds if you like.

Okay I got this recipe from Brenda's Family Crockpot site. We enjoyed this one too and will definitely repeat this one.

Asian-Style Chicken

6 whole chicken legs
1/2 cup soy sauce
1/4 cup packed light brown sugar
1 clove garlic, crushed
8 ounces can tomato sauce

Rinse chicken and pat dry with paper towels. Place chicken in a slow cooker. In a medium bowl, combine soy sauce, brown sugar, garlic and tomato sauce. Pour sauce over chicken. Cover and cook on low for about 5 hours or until chicken is tender.

I have not made this recipe yet, just want to keep it for future reference.

Hawaiian Rhoades Rolls

20-24 frozen rhoades dough balls

Mix sugar and milk together. Spray cookie sheet with Pam and place 20-24 frozen dough on the cookie sheet. Pour mixture over the dough and cover with sprayed saran wrap. Let rise until at least double in size and cook according to Rhoades package directions.

1/2 cup butter or margarine
1/2 cup milk

Cook and drain 8 oz fettuccine noodles.
In a large saucepan combine cream cheese, Parmesan, butter and milk, stirring constantly until smooth and thick. Toss pasta lightly with sauce, coating well.

I had this at a neighbor's house and it was wonderful. I will be trying it very soon with my family.

Crock-Pot Apple Oatmeal

Ingredients:

¼ c. brown sugar
1 T. melted butter
2 cups water
¼ t. salt
½ t. cinnamon
1 c. regular oats
1 c. peeled, cored, chopped apple
½ c. chopped dates
½ c. chopped walnuts

Method:

Spray the inside of a 3-4 quart slow cooker with nonstick cooking spray. Combine all ingredients in the slow cooker and mix well. Cover and turn on low setting. Cook overnight, or 8-9 hours. Stir well before serving. Serves 8

White Bread - Bread Machine

1 cup hot water
2 tsp. yeast
3 tbs. sugar
1/4 cup vegtable oil
1 tsp. salt
3 cups flour

Pour the hot water into your bread machine then add the yeast and sugar, let sit for 5 min. Add the oil, salt and flour and start bread machine on basic or rapid selection.

I cook mine as a 1.5 lb. loaf, light crust, and have used the rapid selection every time I have made this. My husband loves it. We have made this almost every day this last week and one day I made it twice.

White Chocolate Chip, Cranberry, Macadamia Cookies

· 1 cup butter, softened to room temperature

· 1 cup packed brown sugar

· 1 cup white sugar

· 2 eggs

· 1 Tablespoon vanilla

· 3 cups all-purpose flour

· 1 teaspoon baking soda

· 1 ½ cup white chocolate chips

· 1 ½ cup dried cranberries

· 1 cup macadamia nuts chopped.

Preparation: Preheat oven to 375 degrees. Spray a cookie sheet with pan release. In a large bowl, cream together the butter, brown sugar, white sugar until fluffy. Beat in the egg and the vanilla. Combine the flour and baking soda and stir into the sugar mixture. Do not over beat as this will cause the cookies to be tough. Fold in white chocolate chips, cranberries and nuts. Drop by heaping spoonfuls onto the cookie sheets. Bake for 10 – 12 minutes until slightly brown on the edges. Allow cookies to cool for 5 minutes on the cookie sheets before placing them on a cooling rack.

I made these tonight and they are delicious. I will definitely make them again.

Brownie Samoas

1 brownie mix
3 1/2 cups shredded coconut, toasted
(2) 14 oz. package of caramels, unwrapped
1/2 tsp. salt
4 tbsp. milk
3 oz. semi-sweet chocolate
Prepare brownie mix according to box directions ( I made min according to the directions for cake like brownies. I also lined my pan with aluminum foil to easily remove the brownies from the pan for cutting.). Cool. Place the caramels, salt, and milk in a microwave safe bowl and cook on high for 3-5 minutes. Stop occasionally to stir. Cook until all caramels are melted and smooth. Add coconut and mix together. Spread over cooled brownies. Refrigerate 4-5 hours or overnight. Remove at least 1 hour from the fridge before cutting. Cut into bars and drizzle with melted semi-sweet chocolate.

Apricot Chicken

1 bottle Catalina Salad Dressing
1 cup apricot jam
1 envelope onion soup mix
4 chicken breasts

This recipe can be done in the crockpot on low for several hours or in a baking dish in the oven at 350 degrees for 1 hr. You just place the chicken in and cover with the other ingredients. I did mine in the oven for about 2 hrs at 300 degrees and I covered it with tinfoil for 1 1/2 hours then removed the tinfoil for the last 30 min. I served this with white rice and it was wonderful. I would definitely make this again, and best of all my kids and husband liked it.

Chocolate Chip Toffee Bars

2 1/3 c. flour
2/3 c. brown sugar
3/4 c. butter
1 egg, slightly beaten
1 (12 oz.) pkg. chocolate chips
1 c. chopped nuts
14 oz. sweetened condensed milk
10 oz. Skor toffee bits
Stir together flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Add egg and mix well. Stir in 1 1/2 c. chocolate chips and all of nuts. Reserve 1 1/2 cups of this mixture and press remaining into a greased 9x13 inch pan. Bake for 10 minutes at 350. Pour milk over hot crust and top with 1 1/2 cups toffee bits. Sprinkle remaining crumbs over top plus remaining chips. Bake 25-30 more minutes. Top with remaining toffee bits.

*I made this tonight, they were pretty good. I didn't use all of the Skor toffee bits cause I didn't have a full package. I would make them again.

Slow Cooker Clam Chowder

Slow Cooker Clam Chowder

1 (10.75 ounce) can condensed cream of celery soup

1 (10.75 ounce) can condensed cream of potato soup

1 can New England clam chowder

2 cans minced/chopped clams (1 can drained, 1 can undrained)

1 quart half and half cream

1 pint heavy whipping cream

red potatoes peeled and diced

celery diced

onion chopped

salt and pepper to taste

Mix all ingredients into slow cooker. Cover and cook on low for 6-8 hrs.

* Okay I thought I should start telling you which of these recipes I have tried. I made this for our Relief Society Dinner Group tonight and I thought it turned out pretty good. I really like that I could have Clam Chowder in a crockpot, since regular Clam Chowder takes a little longer. I will definitely make this recipe again *

Stew

1 can minestrone soup
1 can tomato soup
1 can water
1 to 1 1/2 pounds stew meat
1 onion, chopped
3-4 carrots, thickly sliced
3-4 potatoes, cut into chunks
Salt and pepper to taste

Combine all in a crockpot. Cook on low for 8-10 hours or high 4-5 hours. Serves 4-6.

Slow-Cooked White Chili

1 pound boneless chicken breast
1 medium onion, chopped
1/2 tsp. minced garlic
1 1/2 cups water
1 15-ounce can great northern (or use cannellini ) beans, rinsed and drained
1 15-ounce can garbanzo beans (chickpeas), rinsed and drained
1 11-ounce can whole kernel white corn, drained
1 4-ounce can chopped green chilies
1 to 2 tsp. chicken bouillon granules
1 tsp. ground cumin
Fat-free half & half to taste

Place all of the ingredients except the half & half in a slow cooker. Cover and cook on Low for 7 to 8 hours. Just before serving, remove the chicken from the slow cooker and cube or shred it. Return the chicken to the slow cooker and stir in fat-free half & half to your taste.

Chili Recipe

Taco Soup

Add: 1 quart tomatoes
1 can corn with juice
1 can kidney beans with juice
1 small can tomato sauce
1 pkg. Taco seasoning

Simmer for 15 minutes. Serve with Fritos, grated cheese, and a dob of sour cream. Corn bread would also go good with this.

White Chili

1 medium onion

2 Tbs. oil
2 can great northern beans (drained)
1 can chicken broth
1 can white or regular corn
1 can chopped green chilies
1 tsp. salt

1 tsp. oregano
1/2 tsp. pepper
1 cup sour cream
1/2 c. whipping cream

In a large pan saute chicken and onion in garlic and oil. Add ingredients: beans through pepper. Boil, then reduce heat and simmer. Remove from heat and add sour cream and whipping cream. Serve.

Have sour cream, shredded cheddar cheese, and corn chips available as toppings. Yum!**

Creamy Potato Soup

1 pkg (30 oz) frozen shredded hash browns
6 cups water
2 cans cream of celery
4 oz Velveeta cheese, cubed
1 cup sour cream (8oz)
1/2 tsp salt
1/4 tsp pepper

In a large saucepan, combine the potatoes, water and onion. Bring to a boil. Reduce heat- stir in soup and cheese. Cook and stir until cheese is melted.

Stir in the sour cream, salt and pepper. Cook and stir until heated through. (Do not Boil.)

Serve with corn bread or crackers.

Creamy Pork Chops

6 pork chops, browned
3 T ketchup
1 T Worcestershire sauce
1 small onion, chopped
1 can cream of chicken soup.

Place pork chops in crock-pot. Mix remaining ingredients together and pour over pork. Cook 4-5 hours or until done. You could also do BBQ sauce.

Crockpot Taco Soup

1 (16 ounce) can kidney beans

1 (28 ounce) can diced tomatoes

1 envelope taco seasoning mix
1 envelope hidden valley ranch dressing mix
1 lb ground beef

Cook meat and drain. Add all ingredients to the crock pot. DO NOT DRAIN CANS. Stir it all together and cook on high for a couple hours. Keep on low until serving to keep hot.. You can garnish it with sour cream, shredded cheese, chopped green onions and/or tortilla chips. It’s a little spicy, but very tasty.

Refried Bean Soup

1 can fat free chicken broth
1 (10 oz.) can Ro-tel or Mexican tomatoes

Chili

1 lb. Jimmy Dean Maple Sausage
4 reg. size cans red kidney beans, drained
1/2 to 1 whole onion chopped
1 pkg. chili mix
1 jar any kind of salsa
1/2 cup or so sugar

Cook Sausage into bite size pieces. Then combine all ingredients into crock pot and cook 3-4 hours on low.
*The maple sausage can be found by the breakfast bacon at the grocery store, or you can replace it with ground hamburger or ground turkey.
*Also, you can make a little extra chili and then use it as the meat base for Navajo tacos, a couple days later. For those just buy a big bag of Rhodes rolls and flatten them out and then fry it. Maybe not too healthy, but it tastes really good! I love them with honey butter too!!!*

Coke Chicken

1 can Coke
1 cup Barbeque Sauce
1/2 cup Ketchup

Throw it all in the Crockpot for 4-5 hours. You can pull out at 3 hours and shred it then turn the crockpot to warm for another hour. Serve over Rice. You can use leftovers for sandwiches too.

Crock Pot Sweet and Sour Chicken

4 boneless, skinless chicken breasts
3/4 cup of water
3/4 cup of ketchup
1/2 cup of sugar
2 T. vinegar
2 T. worchestershire sauce
4 T. soy sauce

Place chicken breasts in crock pot. Combine other ingredients and pour over chicken. Cook on high for 5 hours or on low for 8 to 10 hours. THAT'S IT!!

Serve this chicken on some rice, cooked peppers, and steamed broccoli.

Chicken Enchilada Soup

1 large can diced tomatoes
2 cans chicken broth
1 can corn (drained)
1 can black beans, rinsed
1 can green chilis (I have used both the 4 oz and the 7 oz-- just depends on your taste)
1 pkg taco seasoning (the whole package is usually too spicy for kids, so I just use about a third)
1 tsp cumin
4 cooked chicken breasts, cubed. (I have also bought rotisserie chickens from the deli and just pulled off the chicken I wanted instead of cooking chicken breasts)

Pour all the ingredients in a large pot. Simmer until heated through.

Can use cheese, sour cream, Frito's corn chips and green onions to garnish.

Poppyseed Coleslaw

3-5 green onions, diced
1 green apple, unpeeled and chopped

Sweet Aromatic Chicken

1/2 cup coconut milk
1/2 cup water
8 chicken thighs, skinned
1/2 cup brown sugar
2 tbsp soy sauce
1/8 tsp ground cloves
2 garlic cloves, minced
Combine cocunut milk and water. Pour into greased slow cooker. Add remaining ingredients in order listed. Cover. Cook on Low 5-6 hours. Enjoy! Serve with rice.

Pizza Roll - Ups

· 2 loaves frozen bread dough (or your favorite dough recipe, mine is below)

· 2 cups mozzarella cheese

· 1 cup pizza sauce (to go on pizza)

· 3 cups pizza sauce (for dipping)

· Whatever toppings your family likes, (pepperoni, sausage, ham, pineapple, black olives, etc…)

· Pizza Sauce:

· 2 - 15 ounce cans tomato sauce

· 1 teaspoon Italian herb seasoning

· 1 tbsp fresh parsley

Thaw dough. Using both loaves together, roll into a 14 x 24 rectangle (1/4 inch thick). Spread 1cup pizza sauce mixture on dough. Sprinkle cheese evenly on top of sauce. Top with your choice of toppings.

Roll up, lengthwise like a jellyroll and cut into 24, 1 inch slices.

If freezing, see directions below. Otherwise, spray cookie sheet with non-stick spray and place rolls about 1 inch apart. Bake at 400 degrees for 8 - 12 minutes. Heat sauce in a saucepan and serve as a dipping sauce.

Freezing directions: Place roll-ups on a cookie sheet sprayed with non-stick cooking spray, and flash freeze. When frozen, place 12 roll-ups in a freezer bag. Freeze the dipping sauce in a separate freezer bag.

Foil-Pack Taco Chicken Dinner

4 small boneless skinless chicken breast halves (1 lb.)
4 tsp. TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
2 cups thinly sliced peeled potatoes
1 cup KRAFT Mexican Style Shredded Cheese
1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

PREHEAT oven to 400°F. Sprinkle chicken evenly with seasoning mix. Place 1/2 cup of the potatoes on center of each of four large sheets of heavy-duty foil; top each with 1 chicken breast, 1/4 cup of the cheese and 2 Tbsp. of the salsa.
BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in single layer in 15x10x1-inch baking pan.
BAKE 30 to 35 min. or until chicken is cooked through (170°F) and potatoes are tender. Remove packets from oven. Let stand 5 min. Place one packet on each of four dinner plates. Cut slits in foil with sharp knife to release steam before opening. Top each serving with 1 Tbsp. of the sour cream.

* We have made this recipe a couple times. I really like it as does my husband and kids. It is a great change from the normal tin foil dinners. *

Homemade Pizza Dough

2-1/2 C flour

1 t. salt

1 t. sugar

1 T quick-rise yeast (one package)

1 cup warm water

1 T olive oil

In a bowl, combine the first four ingredients. Add water and oil to flour mixture. Add additional flour if needed to form a soft dough. (I have never had a need to). Turn onto a floured surface, knead for 1 to 2 minutes until smooth. Spray bowl with PAM, place dough in bowl and turn to coat. Cover and let rise for 20 minutes. Can leave longer than 20 minutes and its fine. Punch dough down and spread into a 12" or 16" pan.

Chicken and Spinach Stuffed Shells

44 uncooked jumbo pasta shells (That’s about one and one-half 12-oz boxes)
2 c chopped cooked chicken
2 c fresh chopped spinach
1 onion, chopped
2 cloves garlic, minced
1 (15oz) container ricotta cheese
2 (8oz) packages cream cheese, softened
1 (5oz) package shredded Parmesan cheese (about 1 2/3 c.)
1 large egg, lightly beaten
1 Tb dried parsley flakes
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp pepper
2 c shredded mozzarella cheese, divided
1 (26oz) jar prepared spaghetti sauce (any variety)

Cook shells according to package directions (be sure to stir every once in awhile so they don't stick to the bottom of the pan and tear apart); drain and set aside.
Preheat oven to 350°. Lightly grease 2 13x9x2inch baking dishes.
In a large bowl, combine chicken and all the rest of the ingredients except mozzarella and spaghetti sauce. Stir in 1 cup mozzarella. Spoon into shells. Spread half of spaghetti sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil. Bake, covered, for 40 minutes. Uncover, sprinkle with remaining 1 cup mozzarella. Bake for 5 to 10 more minutes.
Makes 8-10 servings.

Taco Pasta Shells

16 jumbo pasta shells (about 5-6 oz dry)
3 cups cooked shredded or ground meat*
4 ounces non-fat cream cheese, softened
1/2 package (about 2 tablespoons) taco seasoning**
1 1/2 cups shredded Monterey Jack cheese
2 cups chunky salsa
1 cup fat-free sour cream
optional garnish

Preheat oven to 375 degrees.

Cook pasta shells according to package directions. Drain and rinse with cold water. Cover with cold water until ready to use. Set aside.

While shells are cooking, shred cooked meat, or brown raw lean ground beef until cooked through. Stir together softened cream cheese, seasoning mix, 1/2 cup shredded cheese, 1/4 cup salsa, and 2 tablespoons water. Add meat and mix.

Spread 1 cup salsa in bottom of a 9x13 baking dish. Drain pasta shells; fill each with equal portions prepared meat mixture and place in prepared baking dish; spoon remaining salsa over top of shells. Cover with a lid or foil and bake 15-20 minutes or until heated through. Remove cover, sprinkle with remain shredded cheese; continue to bake 5 minutes to melt cheese. Serve with a dollop of sour cream and garnished with snipped cilantro, parsley, chives, or green onions.

Notes:
To reduce sodium, look for reduced-sodium salsa or use fresh salsa

Lemonade

Cheese Danish

2 tubes crescent rolls
1-8 oz. cream cheese
3/4 cup sugar
2 tsp vanilla

Beat cream cheese, sugar and vanilla until fluffy. Spread one tube of rolls in greased 9X13 pan. Spread cream cheese mixture on top. Spread second tube of rolls on top. Bake at 350 degrees for 30 minutes. Ice with mixture of powdered sugar, almond flavoring, and milk. Sprinkle with sliced almonds while frosting is still warm.

This is one of our favorite desserts and very easy to make.

Yogurt Pie

1-8 oz. container cool whip
2-8 oz. containers yogurt, your favorite flavor

Mix yogurt and cool whip together and pour into prepared crust. Refrigerate 2-3 hours before serving or overnight. Delicious and Easy!

Shredded BBQ Pork

6-7 lb pork roast
3 Tbs ground black pepper
5 Tbs packed brown sugar
3 Tbs paprika
2 Tbs salt

Pat seasonings onto pork roast and place in crockpot. Cook on low 5-7 hours or high 3-5 hours. Shred meat and then pour your favorite bottle of BBQ sauce on top of the meat. Simmer for a couple minutes.

Crockpot Brown Sugar Chicken

3 or 4 large boneless, skinless chix breasts (could also use chicken parts)

1C brown sugar

2/3 C vinegar

1/4C sprite or 7-up

2-3T minced garlic

2T soy sauce

1 tsp pepper

Mix ingredients and pour over chicken in crock pot. Cook 6-8 hours on low. Thicken juice with a bit of cornstarch if you like. Serve with rice or noodles. Can double the recipe on the sauce - if you like a lot of sauce.

Old-Fashioned Apple Crisp

4 cups sliced peeled tart apples (about 3 medium)
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
1 teaspoon ground cinnamon
1/4 to 1/2 teaspoon ground allspice

Vanilla ice cream, optional

Place apples in a greased 8-in. square baking dish. In a small bowl, combine brown sugar,
flour, oats, cinnamon and allspice; cut in butter until crumbly. Sprinkle over apples.
Bake, uncovered, at 375° for 30-35 minutes or until apples are tender. Serve warm with
ice cream if desired.

Cinnamon N’ Spice Oatmeal Muffins

2/3 cup all purpose flour

½ cup rolled oats

¼ cup sugar

1 tsp baking powder

½ tsp ground cinnamon

¼ tsp ground nutmeg

1/8 tsp salt

Dash ground cloves

1/3 cup milk

1 beaten egg

2 tbsp cooking oil

½ tsp vanilla

¼ cup chopped walnuts, pecans, or almonds

Line six 2 ½ inch muffin cups with paper baking cups, set aside. Preheat oven to 400º. In a medium mixing bowl stir together the flour, rolled oats, sugar, baking powder, cinnamon, nutmeg, salt and cloves. Make a well in the center of the dry ingredients.

In another bowl combine the milk, egg, oil and vanilla. Add the liquid ingredients all at once to the dry ingredients. Stir just until moistened (batter should be lumpy). Fold nuts into the batter. Spoon batter into lined muffin cups, filling each 2/3 full. Bake for 17-20 minutes or until tops are golden. Remove from oven and cool slightly on a wire rack. Serve warm. Makes 6 muffins.

Mayonnaise Cake

2 tsp baking soda
4 tablespoons cocoa
1cup sugar
1 cup mayonnaise (not salad dressing)
1 cup water
2 tsp vanilla

Mix dry ingredients together then add liquid ingredients.
Bake in 2 x 8" round or square greased and floured pans at 350 for 20 - 25 mins or until cooked Add filling and topping of your choice when cool.

PEANUT BUTTER CUPS

1 cup peanut butter
1 3/4 cups crushed graham crackers
2 cups powdered sugar
2 cups chocolate chips

Melt butter and peanut butter together.
Stir in powdered sugar and crackers.

Melt chocolate chips in double boiler or microwave; Spread onto the peanut butter mixture.
Chill until firm and remove from fridge.
Cut into squares when softened to room temperature.

1 HEATH CANDY BAR CHOPPED
IN A LARGE SAUCEPAN COMBINE THE BUTTER, CARAMELS & MILK; COOK AND STIR OVER MEDIUM-LOW HEAT UNTIL SMOOTH. COOL. IN A MIXING BOWL, COMBINE THE CAKE MIX, OIL AND EGGS; MIX WELL. STIR IN CHIPS AND CHOPPED CANDY BAR. PRESS THREE-FOURTHS OF THIS MIXTURE INTO A GREASED 13 X 9 PAN AND BAKE AT 350 FOR 15 MINUTES. PLACE ON A WIRE RACK TO COOL FOR 10 MINUTES.
POUR CARAMEL MIXTURE OVER THE CRUST. DROP REMAINING DOUGH BY SPOONFULS ONTO THE CARMEL LAYER. BAKE FOR 25 MINUTES OR UNTIL EDGES ARE BROWN.

Apple Pecan Delight

3-4 apples, peeled, cored and sliced
1 1/2 tsp. cinnamon
1 1/2 tsp. sugar
3/4 c. butter, melted
1 c. sugar
1 egg
1/8 tsp. salt
2/3 c. chopped pecans
1 c. flour

Grease a 9 inch pie pan with butter. Place sliced apples in pan and sprinkle with the 1 1/2 tsp. of cinnamon and sugar. In a bowl, mix 1 c. sugar with melted butter. Stir in egg, salt, pecans and flour. Mix well and spread over apples. Bake at 350 degrees for 1 hour or until golden brown. Serve with Winder whipped cream on top.

Peanut Butter Pancakes
